Vegetable Smoothies are not quite as common as fruit smoothies, possibly because vegetable juice is more common. We have a few unusual ones such as Pumpkin, Yam and even kale. The extra vitamins and minerals that vegetables add to any drink, whether as a smoothie or just as a juice recipe, are always well worth the effort…the only part you lose out on is the lack of fiber.
1 3/4 cups pumpkin, canned – chilled.
12 ounces evaporated skim milk – chilled.
1 1/2 cups orange juice.
1/2 cup banana – sliced.
1/3 cup brown sugar, packed.
Place all ingredients in blender and blend well.
If desired, serve over ice and sprinkle with cinnamon.
2 cups carrot juice.
1/2 cup apple juice.
6 oz. non-fat vanilla or plain yogurt, frozen.
Put all ingredients into blender.
Blend until smoothie consistency is reached.
JADE ZINGER SMOOTHIE (Cucumber)
1 cucumber, peeled, seeded and chopped.
3 tablespoons mint leaves & mint sprigs — finely chopped.
1 1/2 cups apple juice or still cider.
1 cup lemon sorbet.
1 cup ice cubes.
Place the cucumber, mint, apple juice or cider, sorbet and ice in a blender, and blend until smooth.
Garnish with mint, and serve.
Yields 2 big glasses.
KALE AND BANANA SMOOTHIE
2 cups chopped Kale.
1/2 cup of light unsweetened Soy Milk.
1 Tablesp. Flax seeds.
1 Teasp. Maple Syrup.
Place all the ingredients in the blender together.
Cover and puree until smooth.
Serve over ice.
EASY AVOCADO SMOOTHIE
1/2 Chilean ‘Hass’ Avocado.
1 cup Orange juice.
1 (6 0unce) container Vanilla non fat Yoghurt.
Put all ingredients into a blender.
Blend until smooth.
Serve in tall glasses.
2 medium Yams.
3 cups Vanilla Yoghurt.
1 cup Milk.
1 cups of ice cubes.
1 teasp. White Sugar.
1 ripe Banana, sliced.
Prick Yams with a fork and put on a plate.
Cook in the microwave for 8 to 10 minutes, turning until tender.
Cool, peel and dice.
Combine the Yams, Yoghurt, Milk, ice cubes, sugar and Banana in the blender.
Blend until smooth.
